Caramel with fleur de sel

Ingredients :

200g sugar

20cl single cream

20g butter

3 pinches Le Paludier de Guérande flower of salt

Instructions :

Step 1:
Boil the sugar with a small amount of water until you obtain an amber caramel, along with the cream.

Step 2:
Add the diced butter to the caramel. Mix well. Add the boiling cream and whisk briskly.

Step 3:
Add the fleur de sel and return to the heat for a few minutes, until thickened.

Step 4: 
Leave to cool.
