Chicken Brochettes
Ingrédients :
  • 800g chicken breasts
  • 3 pears (Williams or Comice)
  • 2 tbsp honey
  • 3 tbsp olive oil
  • 1/2 tsp grated fresh ginger
  • Zest from 1 mandarin orange
  • Juice from 1 mandarin orange
  • Juice from 1 lemon
  • 1 tsp of Le Paludier de Guérande ground salt
  • Pepper
  • 2 tbsp sesame seeds
  • 1 level tbsp chopped dill
  • 50g butter

Prepare the marinade by combining the olive oil, mandarin orange juice, mandarinorange zest, ginger, honey, salt and pepper on a plate.  Cut the chicken into large chunks. 

Place the chicken pieces in the marinade and mix well, cover and leave in the fridge for an hour. 

Wash the pears and cut in half.  Remove the centre and cut the quarters into large regular cubes.  Squirt with lemon juice and set to one side. 

Brown the chicken in a pan with 50g of butter, cook over a medium heat, stirring often.  Pour over the marinade to deglaze the pan.  Remove the pieces of nicely-browned chicken and roll them in the sesame seeds.  

Make up the brochettes by spearing with a chunk of chicken followed by a cube of pear.  Sprinkle with Le Paludier de Guérande ground salt, pepper and chopped dill.
